Hey Reader, We have one last hurrah of summer before the season ends. We had a lot of bananas, so we decided to try making a Vegan Banana Pudding recipe with them. With a little vanilla pudding and some coco whip, it's rich, sweet, and comforting with a nice crunch from the speculoos cookies (you can of course find vegan vanilla wafer cookies, but we really enjoyed the cookie butter flavor from the speculoos cookies). This dessert is flavorful, satisfying, and really easy to make. And of course, we needed to try this recipe with a homemade pudding (you can make it with box mix if you prefer; almond milk or any non-dairy milk work well).
