Hey Reader, We LOVE Italian food. Now, we're not going to pretend that any of our Italian-inspired recipes are authentic in any way. We're not Italian and we've used some nontraditional ingredients (like raw sunflower seeds, tofu, nutritional yeast, etc.) to achieve veganized versions of Italian classics. These may not be authentic but they are DARN DELICIOUS! We're so obsessed, in fact, that we gathered up all our Vegan Italian Recipes into one post! And... we got a little over excited... and decided to create two brand new recipes to go in this post as well! We've been testing these recipes a lot so we figured we'd share them on the same day.
