Vegan Zucchini Recipes! | Zardyplants

Hey, Reader!

It's getting to be that time of the summer! This year we didn't get to do as much planting as we wanted (but hopefully next year!). However, we have been buying a ton of zucchini in the store because it's been cheap and most of it's fairly local! I love zucchini (and other types of summer squash) because it's super versatile, easy to cook, pretty mild in flavor, and it can actually be super creamy as you'll see in our zucchini soup recipe below.

I actually really love cooking and preparing seasonal produce in general, not just zucchini. For example, we make an awesome melon salad that works with basically any melons you like. And if you can get your hands on some garlic scapes, you can make Garlic Scape Pasta which is a real treat.

Anyway, we're talking about zucchini today so here's a list of our zucchini/squash recipes (mostly interchangeable with some other summer squash varieties such as yellow or crookneck, at least in these recipes) and hopefully you'll find something in here you'd like to try!

Hey Reader, We've got two new amazing recipes (and a great older one) for you today! We've been wanting to get you this tender, melt-in-your-mouth Braised Tofu recipe for a while (Liz contends it is the best way to make tofu after nearly 10 years of eating a lot of tofu), but we wanted to pair it with something. After a few tests, found a perfect use for cabbage (it was recently on sale for 39 cents a pound but it's usually pretty inexpensive)! Our Sautéed Cabbage with Garlic is soft and and...

Hey Reader, It's REALLY hot out where we are in the world. It's a really good thing we made these Coconut Ice Cream Bars a few days ago, as they might have melted while we were filming! But once they're done, they are such a lovely cool treat to have around the house. We've have them in a reusable bag in our freezer and it's nice to just reach into it and have a quick bite to cool down. Best of all, it's a really easy recipe! AND if you can't have coconut, we also have a cashew version in the...
