Hey, Reader! It's getting to be that time of the summer! This year we didn't get to do as much planting as we wanted (but hopefully next year!). However, we have been buying a ton of zucchini in the store because it's been cheap and most of it's fairly local! I love zucchini (and other types of summer squash) because it's super versatile, easy to cook, pretty mild in flavor, and it can actually be super creamy as you'll see in our zucchini soup recipe below. I actually really love cooking and preparing seasonal produce in general, not just zucchini. For example, we make an awesome melon salad that works with basically any melons you like. And if you can get your hands on some garlic scapes, you can make Garlic Scape Pasta which is a real treat. Anyway, we're talking about zucchini today so here's a list of our zucchini/squash recipes (mostly interchangeable with some other summer squash varieties such as yellow or crookneck, at least in these recipes) and hopefully you'll find something in here you'd like to try! Hey, Reader! Sometimes your little ones *this also happens to adults* turn into picky eaters. It happens to all of us; Paul would only eat the cheese off pizza for a while and Liz would only eat bowls of olives for dinner. If your kids (or anyone in your life) won't eat their veggies, you can always hide them beneath/inside something more exciting. Some of the sauces may be green, but surely there are other explanations for that... Anyway, below are some recipes we think can help you get some...
